Healthy Breakfast!

I don't wake up early enough to have breakfast before I leave for work so I always make sure it's the first thing I do when I get to work.
Old fashioned oats, blackberries, and blueberries is a favorite of mine. 
 

On the weekends I really get to enjoy breakfast

Mushroom, tomato, and cheddar cheese omelet. I usually use one whole egg and then use egg whites to build up the amount of egg. Nom Nom Nom!


Easy healthier comfort food

I have a craving for warm hearty comfort food on cold winter days. Don't we all?
 This was a healthier experiment version of chicken pot pie and it turned out quite delicious.

I used reduced calorie Campbell's cream of chicken soup, left over chicken, and frozen peas and carrots to make the filling. And then made that golden brown delicious crust out of Bisquick mix.

Mmmm I just finished eating this turkey stew leftovers for  lunch! Too bad I for got the after picture.

I used raw turkey pieces, baby red potatoes,  mushrooms, garlic, rosemary, thyme, chicken broth, and cream of mushroom soup. I put it all in the slow cooker before work on low and came home to a wonderful aroma and comforting healthy meal.
